Parents rejoice! The tots are heading back to school over the coming week. Back to school runs and traffic; back to homework and packed lunches. We can help out with at least one of these. Instead of sending your kid with the normal cheese sandwich, banana and yogurt, why not surprise them with these quick, healthy and tasty packed lunches?

Sticking to the recipe from Bon Appetit isn’t a necessity. Change up the spinach for lettuce or the cucumber for tomato or beetroot, the options are endless. Pita bread means kids can enjoy their sandwich without dripping sauces from between the slices and fun concoctions can be held within. Maybe even once a week make it an American PB&J treat?
